The Adventure of Smoked Salmon from Sotra Fiskeindustri
Along the coast of Sotra, where the sea meets wave-battered skerries, people have lived from what the sea provides. Here the journey begins – with salmon, rich in nutrients, shaped by cold, clear water.
From small to solid player
The adventure began on a small scale in the 1980s. From local deliveries to shops in Western Norway, demand grew. Soon, the taste from Sotra became known far beyond the coast – and the journey continued out into the world.
The Secret of Salt
With gentle hands, the fish is salted – just as generations have done before. The salt draws out the flavour, preserves the quality, and lays the foundation for what is to come. No rush. Just time, experience, and respect for the raw ingredient.
The smoke and the craft
The salmon is then placed in the smoking oven. Slowly, over time, it is smoked with carefully selected beech wood chips, which give it its characteristic flavour and aroma – developed through genuine craftsmanship. Here, tradition and technology meet, but the soul remains the same: Patience, precision, and respect for the raw ingredients.
